Chicken Scrumptious 

This is an incredibly easy and as described, scrumptious, chicken recipe passed on to me from a dear friend. It was a favourite family recipe of hers and has now become a family favourite for us!

Ingredients for 4 servings

  1. 4 chicken breasts
  2. 2 tablespoons of dry breadcrumbs (These can be bought in a pack.)
  3. 4 level tablespoons of mayonnaise
  4. 60 grams parmesan cheese (just as tasty with cheddar!)
  5. A tablespoon of chopped or dry herbs if available, such as parsley, thyme or oregano.

 

Method

Preheat oven to 210 degrees Celsius.

  1. Combine mayonnaise with cheese in a bowl. I find it easier to buy ready grated cheese but if you are able to grate your own cheese without grating your fingers then it is obviously cheaper to buy a block of cheese.
  2. Arrange the chicken breasts on a baking tray or ovenproof dish.
  3. Evenly top each chicken breast with the cheesy mayonnaise.
  4. Sprinkle the breadcrumbs and herbs on top.
  5. Bake for at least 20 minutes in the preheated oven, but if they are particularly large chicken breasts I would play safe and cook for 30 minutes in total. The RNIB do sell a talking meat thermometer which is an option if you cook meat often and do not have a sighted person to check that the meat juices are running clear (particularly important for chicken.)
  6. Enjoy served with a green salad or vegetables and perhaps some delicious garlic bread.

Lemon Yoghurt Swirl

This is such a simple recipe that tastes delicious and takes just minutes to make.

All you need is:

300 grams jar of lemon curd

500 grams tub of yoghurt, preferably greek yoghurt if you have it.

Put the yoghurt in a bowl and then empty the jar of lemon curd into it and just swirl the lemon curd into the yoghurt gently with a spoon. It doesn’t need mixing right in, just swirl it in.
